Plastic cutting boards, over a period of time, may develop grooves from the knife blade that can harbor bacteria. Soak boards in a solution of 1 teaspoon (5 ml) of chlorine bleach per 1 quart (1 liter) of water for 30 minutes to thoroughly sanitize the board.
